  7. First Third Strong start. Heavy oak, cinnamon, oolong tea, eucalyptus, earth and touches of honey leather. Strength is upper end of medium bodied. Very surprising. The retrohale is assertive. Heavy layers of rich oak, oolong tea, cinnamon, eucalyptus and earth move with swagger through the nasal passages. The after finish is a cornucopia of flavour. Highly complex and expansive on the palate due to the strength level. Not in an intrusive way though. Rich oak, cinnamon, eucalyptus, earth and oolong tea establish the base. Candied ginger, leather and light touches of honey and citrus on the back end. Second Third Strength level subsides to a medium bodied level. Steadies out the flavour profile. Rich oak gives way to cocoa and is joined by eucalyptus, earth and cinnamon as they live through the nasal passages. The after finish brings cocoa, rich oak, earth, cinnamon and eucalyptus. Citrus, honey, leather and touches of oolong tea form the back end. Candied ginger and lavender make cameo appearances throughout the second third. Just enough to let you know they are there. Very subtle interplay between flavours at this point. Much more enjoyable with the tempered medium bodied strength level. Gently coats the palate and slowly dissipates. Beautiful.... Final Third A change of events in the retrohale and after finish. Didn’t see this coming. Cinnamon, cocoa, roasted nuts, eucalyptus, earth and touches of citrus are prevalent in the retrohale. More vibrant as they move through the nasal passages. This is also reflective in the after finish. Cocoa, roasted nuts, cinnamon, eucalyptus and citrus leaf the way. Leather, earth, honey, lavender and touches of candied ginger and oolong tea form the back end. Rich oak has faded away. Vivid layers coat the palate. Very complex and well balanced. The flavours dance on the palate and slowly ebb away. The medium bodied strength level is perfectly aligned with the flavours. A fantastic ending.... Final Impressions Wonderful base flavours but not ready for prime time. Still can benefit from more time in slumber to round out the edges. Would like to see the rich oak settle down a bit. Strength level can also be toned down in the first 2 thirds. Complexity and nuance are there. Great subtle changes within the flavour profile in each third.
