On a side note, I see that a lot of wines in OZ now have the twist off caps, :mellow:

You are correct I don't agree with the cap (Ken thinks they are great) but in this review Ken actually pulls a cork for this bottle with his bare hands.

Guy, the cork and wine industry has a lot to answer for in poor quality corks and almost everyone driving for the cheapest price. The end result is an unacceptable level of tainting in wines particularly those laid down to age.

Stelvin Cap has now been around for 25 years. In side to side tastings of same wines ( producer/vintage) after 5/10/15/20 years they are proving to be far superior sealers of wines producing bottles of stunning consistency with no taint.

I am a lover of cork however the results I am tasting are quite remarkable.

smithy, don't take this the wrong way but these days, i would be asking my employer for "notice".

Actually a lot of premium wine (all over the world) is now put on screw or cap cork (think big bear bottle), even wine makers as Chateau Petrus have started testing screw corks. This because the "cork" cork is not really good for the wine because they can transmit something called 2,4,6-trichloroanisole (or TCA) to the wine creating a corked wine. Using a screw cork or the capsule removes this problem complete.

I heard somewhere that around 40% of all bottles have traceable signs of TCA and around 10% is so corked so you cant drink it. That is a lot of money on wine that (probably) where perfect when they pore it on the bottle. it would be like saying that 3 cigars in every box would be so bad that you cant smoke them, but you love the band so you could never replace it with something else.

Personal i remember my first Petrus, which I bought to my 30-year birthday dinner. I opened the first one and it was stinking as hell (pour it out), second: better but still very very corked (now i was ready to cry), third on: perfect. If that wine had been placed on screw or caps that would never have happened.

Now i like the look of the cork bottle, i love to use a Co2 bottle opener, but i hate corked wine, so I would go with screw cork any day and now more and more winery will go over. The once that will hold on to the cork longest is the lower end middle (which have money invested in machinery). Now there will be snobbery that state that nothing can beat the cork, well, they can have it, i dont care about the packageing, what is important is the quality of the wine, not the label. It would be like saying you dont smoke cohiba because you dont like the band.

I have tons of information about this, i have spoken with a lot of French/Swiss and Austrian wine makers and they all want to make the change (well, not the middle/low end... but they usally have a stressed economy and just dont want to invest..)

On the other hand, my worst wine and food experience ever (and I mean ever, over-boiled, over-salty, messy, no passion, no love) where when i went down to Toulouse/Carcassonne/Narbonne during 4 days of travel and we had 1 good meal (and yes we went to good restaurants..), but we saw ha huge amount of people drinking wine from cans!!!! Maybe i am a wine snob, but I would never ever drink wine from a can...
