MIKA27
Great stuff isn't it, a lot of effort involved. Posted the same video a while back in the Stuff thread.

Guest scsi
You should see the hand made beauties done by Japanese knife masters. Of course I had to have at least two. A chef's knife and a utility knife. One of my best purchases.
spicycorona
I love videos like that. I was never a big fan of Kramers blade shape and balance. I wonder if his blades are less brittle than your traditional hand made Japanese knives. This article mentions his earlier knives being able to hold an edge after cutting through a 2x4. I have a hard time believing that, but if true would really make his knives legendary. http://kitchenknifeguru.com/bob-kramer-knives-spend-300-chef-knife/
JamesNYC
I have 2 of his knifes, one with a nice stand. Great knifes, and easy to use. I have some other Japanese knifes that I use as well. I don't don't cook fish, but they have some amazing knifes for sushi and other fish.
JamesNYC
Here's a picture of one of the knifes- it works as nicely as it looks.
spicycorona
To compare handmade pieces of art here is my Tanaka Ironwood Gyuto. It's literally an extension of my arm when in use. It's light and balance is 50/50 right behind the bolster.
