I'm planning on 225f on indirect heat with some apple wood chunks. Likely using the Meatheads Memphis dust rub. What's your secret for melt in your mouth goodness? Ribs recipe but I guess it will work with thick strips 6 hour cook in a weber 3 hrs ribs on the bbq under smoke around 100C URL=http://s1028.photobucket.com/user/miner900/media/IMG_1640_FOH_zpstqpszbfa.jpg.html][/url] 2 hrs wrapped in foil with a bit of cider or apple juice Then 1hr on the bbq open still at about 100C, baste with bbq sauce and honey Even the Vegans in my family eat this You could finish off the strips on high heat to crackle the skin Yum 1 Link to comment Share on other sites More sharing options...
