PENTÓN APRIL 02, 2021 06:58 PM, UPDATED APRIL 02, 2021 07:40 PM Dozens of people in Cuba have complained in recent weeks that croquetas made by a state company are exploding when cooked and causing burns. Cubans have shared images of burned faces — and videos of the croquetas jumping out of hot oil — on social media. After a multitude of complaints, the state company, Prodal, admitted its croquetas are prone to “violence” and warned customers to prepare them carefully. “It is a common mistake when frying them. The oil should be about 180 degrees [356 degrees Fahrenheit] the croqueta should be at room temperature and you should not fry many at the same time. I'm not a big fan of croquetas at the best of times. Even in Spain, I'll order them on the first day at the beach and the first one or two are great, they're hot and crispy/crunchy and the whole "great to be back" thing. Then they cool down and the final eight are a chore. Croquetas in Cuba, at least from state-run entities, are a different ball game. I was on La Rampa very early one morning and a breakfast place opened up. "Grand", I thought, not expecting much from a state-run kiosk. Just about anything warm and solid would do, I like food but I'm not fussy and generally very happy to make do. The only thing on the menu for breakfast were croquetas, I think it was 6 for 50c. Usually explosions linked to heat result from water turning into steam and expanding rapidly, like rocks into a fire pit. Seeing that there seems to be a delay with the explosion, I wonder if the water is trapped inside the meat. Like the stuff they do to artificially increase the size and weight of the meat. Yuck. I don’t think I would ever be tired of a proper order of croquetas de Jamón; fresh, not processed-frozen which suck...if you have thermomix or a similar kitchen robot I can share a proper recipe.... also Croquetas up North are for some reason, generally better than down south in Spain... And then making croquetas with left overs like Cocido, a bird roast...also cheese croquetas and mushrooms...explosive croquetas seems like a logical product extension. 🤣🤣 1 Link to comment Share on other sites More sharing options...

The best food I've ever had in my life in San Sebastian and Logroño. But I haven't had croquetas there.
